[烹飪技巧] 蒸水蛋有沒有不「老」秘訣?

將蛋與同等分量的水放在平底瓷碟中,用筷子攪拌至看不見蛋白為止。蒸之前,要讓蛋液靜放五分鐘,好讓裏面的氣體溜走,最後還要把留在表面的小氣泡撇去。
"將蛋與同等分量的水放在平底瓷碟中" The idea is to remove all the air in the water/egg mixture. It is recommended to put cold "boiled water" instead of tap water which still contain air in it.
