I think the dimsum have hot pad....or they control the quantity ....
You know real cantonese people will not like this 花招。。。here no one push the cart like HK, ordered from menu.

24 hr yumcha, you lucky duck, you only get that in Toronto, not even in NYC, and not in HK either.
There can't be leftover from "yesterday", it's 24hr non stop service.
