碗仔翅雖不是真魚翅,但起源卻真的來自魚翅。四五十年代在廟街榕樹頭一帶,街邊檔用俗稱「倒餿水」,即酒家食剩的翅頭翅尾,開豆粉水、落味精、豉油等去賣。今日的碗仔翅當然已由鋪頭自己煲自己調校,沒有魚翅,卻有粉絲。5 V1 e! S( H& [# U

現時許多碗仔翅入了鋪,呂仔記做的湯芡很薄,不會起粉糰,入口滑膩,湯味鮮,重要是味精下得較少,食完不會渴足一天。公仔箱論壇7 s7 W/ R7 W2 n. E$ O" L

另外呂仔記生菜魚肉的魚肉標榜沒有增加彈牙口感的化學物質,咬落的確不甚彈牙,但魚鮮味夠,魚肉真實感百分百。$ Q2 o8 k% t1 W0 X# n6 D
