Utilising the final moments of calm before the event, Peter travels to Queensland to pick fresh lychees, the final sweet ingredient for his dessert. The chefs then assemble their desserts before packing up and heading to Hobart, Tasmania. As the day of the event dawns, the chefs carefully prepare their dishes for 250 international guests as the picturesque locations are being set up. Guests ultimately arrive by boat and are treated to an unforgettable experience. A speedy service kicks into action with the chefs pushed to deliver each course with painstaking attention to detail. The 250 international guests luxuriate in each dish, appreciating their foray into the best of Australian cuisine.
