雞精不是從雞身上提取的,它是在味精的基礎上加入助鮮的核苷酸製成的。由於核苷酸帶有雞肉的鮮味,故稱雞精,不過雞精比味精更鮮。從衛生角度講,雞精對人體是無毒無害的,但在烹調時,如果加入過多雞精,則會破壞菜肴原有的味道而影響口味。% k* [/ M+ z$ r$ q9 P
